Skinny Buffalo Chicken Stuffed Sweet Potatoes





I’ve had buffalo sauce on my to-make list for a looong time. I mean, clearly, buffalo wings look amazing so I had to try it. But the thing is, apparently Frank’s Red Hot sauce is the one and only hot sauce you should use to make buffalo sauce. That’s what people from Buffalo, NY, USA say anyway ، And it wasn’t available in Australia. Bummer.

So I had completely forgot about this little project of mine until one day, Solal comes back from our local Montrealer store and proudly shows me a bottle and says: “Look I’ve found a new hot sauce to try!”. Naturally. Solal + hot sauce? Best friends، I mean… he snacks on hot peppers. It’s his thing.

Anyway, this new hot sauce was…Frank’s Red Hot sauce! Coincidence? I don’t think so. It was just a supernatural reminder to finally make a buffalo something. Whoever’s out there, I heard your message loud and clear! .

I didn’t think the internet needed yet another recipe for buffalo wings so I set my heart on something a little bit different and, may I say it, a little bit healthier.

Baked sweet potatoes, with a crispy skin and soft flesh, stuffed with shredded chicken soaked in buffalo sauce, drizzled with blue cheese sauce. O.M.G! Seriously. This is comfort food at its best. And you would think this is about 1 million calories per serving, right? But it’s actually only 320 calories each! No, I’m not kidding. And it’s not even a tiny portion. It’s massive! I’m telling you, you just have to try this recipe ASAP. Enjoy! .




INGREDIENTS

  • 7 medium sweet potatoes (the ones with the orange flesh), skin on .
  • 30 oz / 800 g skinless, boneless chicken breast .
  • 7 tbsp Skinny Blue Cheese dressing ( see the recipe here) - or Ranch dressing .
  • cilantro or parsley, optional .


Buffalo sauce

  • 2/3 cup Frank's Red Hot Original Sauce .
  • 4 tbsp unsalted butter .
  • 1 1/2 tbsp white vinegar .
  • 1/2 tsp Worcestershire sauce .
  • 1/2 tsp garlic powder .
  • 1 tsp cornstarch + 1 tbsp water .

DIRECTIONS

  1. Preheat oven to 400F/200C. Line a large baking sheet with aluminium foil, place sweet potatoes on it and bake for 30 minutes or until flesh is very tender (test with a knife). Turn off the oven and keep the sweet potatoes inside to keep them warm .     
  2. In the meantime, place chicken breasts in a large pot, cover with water and cook on medium-high heat for 30 minutes. Drain and transfer breasts on a cutting board or a plate. When cool enough to handle, shred using two forks or your fingers .                 
  3. In another large pot (you can use the same one you used for the chicken) over medium heat, combine hot sauce, vinegar, Worcestershire sauce, garlic powder. Add butter and whisk while it's melting. When butter is incorporated, stir in cornstarch dissolved in 1 tbsp water. Whisk until sauce thickens, about 30 seconds. Turn off the heat and add shredded chicken. Mix thoroughly to cover chicken with sauce .                                                                                                                  
  4. Take the sweet potatoes out of the oven, cut them in half lengthwise (without cutting them all the way down so that the two parts stay attached together) and stuff them with shredded buffalo chicken. Drizzle one tablespoon of blue cheese sauce on each sweet potato. Top with fresh herbs if using. Serve immediately .

Barbecued Tempeh Burger
These flavorful BBQ tempeh burgers are topped with sauerkraut, sriracha mayonnaise, lettuce, tomato and red onion.



                               




Step 1: Preparing the Tempeh

 1 (8 oz) pkg tempeh, halved lengthwise, then crosswise into 4 pieces* 
 1/4 cup tamari (or soy sauce) 
 2 tbsp mirin 
 1 tsp garlic powder 
 1 tsp onion powder 
 1/4 + cup Barbecue Sauce 


Method 

To start, the tempeh can first be steamed for added flavor and texture; however, if you are short on time, the tempeh can simply be smothered in BBQ sauce and then either grilled or pan-fried.

Note: Depending on the shape of the initial tempeh, how it will need to be cut will vary. In the end, you are just looking to have 4 evenly cut, somewhat thinner, pieces of tempeh, that will fit a hamburger bun.

To steam the tempeh, place the pieces into a steamer and let steam for approximately 15 minutes. Once done, remove the tempeh and place onto a small plate. Using a fork, poke small holes in the tempeh on both sides and set aside.

Next, in a wide shallow dish, combine together the tamari, mirin, garlic and onion powder Add the tempeh, turning to coat it with the marinade, cover and set aside for at least 30 minutes or overnight.

Once the tempeh has been marinated, generously coat each piece, on both sides, with the barbecue sauce. For the sauce, you can either make your own Barbecue Sauce, or you can use a quality pre-made sauce, such as this one from Rufus Teague.

To cook the tempeh, heat a grill over medium heat and let cook for 4 to 5 minutes on each side, or until nicely browned. Alternately, heat a couple of teaspoons of oil in a fry-pan over medium heat and pan-fry the tempeh for 3 to 4 minutes on each sides. The tempeh is done once it has heated all the way through and nicely browned on both sides.





Step 2: Assembling the Burgers

 4 whole grain hamburger buns 1 
 1 cup Sauerkraut 
 1/4 cup sriracha vegan-mayonnaise 
 thinly sliced tomatoes 
 thinly sliced red onion 
 lettuce leaves 


Method 

For this recipe, the Emerald City flavored sauerkraut from Firefly Kitchens goes really well; however, if you have the time, feel free to make and use your own Sauerkraut. This Red Cabbage & Apple Kraut also goes very well with this burger.

For the sriracha mayonnaise, simply combine together 2 to 3 tablespoons of sriracha with a vegan mayonnaise and mix to combine.

Dress the buns with the sriracha mayonnaise and then assemble the burgers as desired. Also note that while these toppings are great the toppings are essentially endless, so feel free to experiment.

Ingredients

  • 1pound boneless beef top sirloin steak, about 1-inch thick, trimmed of fat
  • 1/2cup water
  • 1/2cup apple cider
  • 1/4cup Worcestershire sauce
  • 1/4cup balsamic vinegar
  • 1/4teaspoon crushed red pepper
  • Nonstick cooking spray
  • Salt and ground black pepper
  • 1/4cup honey
  • Directions

    1. Place steak in a resealable plastic bag. Add water, apple cider, Worcestershire, balsamic vinegar, and crushed red pepper. Seal bag, turning to coat meat. Let stand 20 minutes, turning occasionally.
    2. Heat a large skillet coated with cooking spray over medium heat. Remove beef from marinade, reserving marinade. Season beef with salt and black pepper. Cook in skillet about 12 minutes, turning once, or until desired doneness. Remove to a cutting board; cover.
    3. Add marinade and honey to skillet; whisk to combine. Bring to boiling; boil gently, uncovered, about 7 minutes or until reduced to 1/3 cup. Serve glaze with sliced steak.

Ingredients

  • 4medium baking potatoes
  • 12 - 16ounces boneless beef sirloin steak, cut 1 inch thick
  • 2cups fresh baby spinach
  • 3/4cup bottled blue cheese salad dressing
  • 1small red onion, cut in thin wedges
  • Directions

    1. Wash potatoes; pierce with fork. Arrange potatoes on microwave-safe plate in spoke formation, leaving 1 inch between each potato. Micro-cook on high (100 percent power), uncovered, 14 to 18 minutes or until tender. (Or bake potatoes in 425 degree F oven for 40 to 60 minutes.) Let stand 5 minutes.
    2. Meanwhile, preheat broiler. Trim fat from steak. Place meat on unheated rack of broiler pan. Broil 3 to 4 inches from heat for 16 to 18 minutes for medium-rare (145 degrees F) or 19 to 21 minutes for medium (160 degrees F), turning once halfway through broiling. Transfer meat to cutting board; let stand 5 minutes.Or, to grill, prepare steak as above. For charcoal grill, grill on rack of uncovered grill directly over medium coals 18 to 22 minutes for medium (160 degrees F), turning once. For gas grill, preheat grill. Reduce heat to medium. Place meat on grill rack over heat. Cover; grill as above.
    3. To serve, roll each potato gently under your hand. Cut an X in top of potato. Press in and up on ends of potato. Cut steak in bite-size strips. Top potatoes with beef strips and spinach; drizzle with dressing. Top with onion wedges. Makes 4 servings.

Open-Face Philly Cheese Steak Sandwiches

Ingredients

  • 1/2cup cold low-fat (1%) milk
  • 1tablespoon all-purpose flour
  • 2ounces extra-sharp cheddar cheese, finely shredded (1/2 cup, packed)
  • 3/4teaspoon salt
  • 2tablespoons olive oil
  • 1pound boneless top loin steak, very thinly sliced*
  • 1/2teaspoon freshly ground black pepper
  • 1large onion, sliced in very thin wedges
  • 1green sweet pepper, thinly sliced
  • 1red sweet pepper, thinly sliced
  • 2whole-grain Italian rolls (each about 6 inches long and 4 oz.), halved lengthwise
  • Directions

    1. For cheese sauce, in a small saucepan whisk together milk and flour to blend. Heat and stir over medium-high heat to bring to a simmer. Reduce heat to medium-low. Cook 2 minutes, stirring frequently until thickened. Stir in cheese and 1/4 tsp. salt untl cheese is melted. Simmer about 2 minutes, stirring frequently, until sauce is velvety and thick. Remove from heat. Cover surface with foil to keep warm and to prevent a skin from forming on top.
    2. In a large nonstick skillet heat 1 Tbsp. of the oil over medium-high heat. Sprinkle beef with 1/4 tsp. each salt and black pepper. Add to skillet and cook for 4 to 5 minutes, just until browned and cooked through. Transfer to a plate; cover with foil to keep warm.
    3. In the same skillet cook onion and sweet peppers in 1 Tbsp. hot oil over medium-high heat for 12 to 14 minutes, until edges are browned and onion is tender. Season with 1/4 tsp. each salt and black pepper.
    4. Lightly toast split rolls. Evenly divide the onion-pepper mixture, meat, and cheese sauce among roll halves.

    TIP

    1. To make slicing the beef easier, freeze it for 45 to 60 minutes before slicing.

    MAKE IT VEGETARIAN

    1. Use 1 large sliced portobello mushroom per sandwich in place of the beef. Saute as directed for the beef.
